Southwestern Bean Dip

Easy and delicious recipe from a client.

Goes Well With: pita chips, corn tortilla chips, crackers

Ingredients

  • 15 oz. can cannellini or great northern beans, drained and rinsed
  • 2 T extra virgin olive oil
  • 3 T fresh lime juice
  • 2 T chopped cilantro
  • 1/2 T chipotle adobo (liquid peppers are in)
  • 1 tsp. cumin
  • 1/2 tsp. garlic powder or 1 clove sauteed garlic
  • salt and pepper to taste
  • optional: scallions, more oil on top
  • garnish: paprika

Directions

  1. Put everthing into a blender and blend until smooth.
  2. Refrigerate several hours, then let come to room temp before serving.
  3. Serve with chips ( I used Parmesan Garlic Pita Chips).
