Ingredients
- 15 oz. can cannellini or great northern beans, drained and rinsed
- 2 T extra virgin olive oil
- 3 T fresh lime juice
- 2 T chopped cilantro
- 1/2 T chipotle adobo (liquid peppers are in)
- 1 tsp. cumin
- 1/2 tsp. garlic powder or 1 clove sauteed garlic
- salt and pepper to taste
- optional: scallions, more oil on top
- garnish: paprika

Southwestern Bean Dip
Time: 5 minutes prep
Servings: 6-8
Directions
- Put everthing into a blender and blend until smooth.
- Refrigerate several hours, then let come to room temp before serving.
- Serve with chips ( I used Parmesan Garlic Pita Chips).
