Directions

  1. Cook first 4 ingredients in heavy small saucepan over low heat, stirring till honey dissolves. Cold completely. (Syrup can be prepared 1 day ahead. Cover and chill.)
  2. Blanch peaches in large pot of boiling water 30 seconds. Drain; rinse under cool water. Slip off skins. Thinly slice peaches. Transfer peaches to large bowl. Gently fold in blueberries and syrup. Chill till well chilled. (Can be prepared 4 hrs ahead.)
  3. Spoon compote to serving bowls. Garnish with mint sprigs and serve.
  4. Yield:4 servings.
