Sour Cherry & Green Tea Granita

Found this recipe when living in Kalamazoo, MI. A delicious and refreshing dessert. You need to use a plastic container, because a metal pan (which are more often than not aluminum) might be reactive.

Ingredients

  • 3 cups sour cherry juice (such as R.W. Knudsen's)
  • Juice of 1 medium lemon
  • 1/2 cup granulated sugar
  • 3 green-tea bags, or 2 tablespoons loose green tea
  • 1 tsp grated fresh ginger

Directions

  1. Bring cherry juice, lemon juice, and sugar to a simmer in a small stainless steel saucepan over medium heat, then reduce heat to low. Simmer, stirring occasionally, for 5 minutes or until sugar is just dissolved, then remove from heat. Stir in green tea and ginger; let steep for 15 minutes. Strain through a fine mesh sieve into a glass bowl (I use a very large glass measuring cup) and cool to room temperature. Pour into a square plastic tupperware or similar container. Cover and freeze until mixture begins to get icy around the edges, about 40 minutes to an hour. Rake through mixture with a fork to break up the ice. Return to the freezer and repeat every 30 minutes or so until mixture is completely frozen and grainy, which can take about 5 hours, and serve.
