SOMBRERO PASTA SALAD

A zippy make-ahead salad that even kids love. Can be a main meal salad, a taste better the next day, take it to work salad.

Ingredients

  • 1 16oz pkg of spiral pasta, cooked aldente, rinsed, drained.
  • 1 lb. ground beef, browned, drained.
  • 3/4 cup of water.
  • 1 pkg of Taco Seasoning.
  • 2 cups shredded sharp cheddar cheese.
  • 1 large green pepper, diced.
  • 1 medium sweet onion, diced.
  • 1 large tomato,seeded, diced.
  • 3/4 cup white shoepeg corn, drained.
  • 3/4 cup black beans, rinsed, drained
  • 2 small (21/4 oz) cans sliced ripe olives, drained.
  • 1 16 oz bottle of Western dressing (reserve 1/2 cup)

Directions

  1. In a medium frying pan add water and Taco Seasoning to browned hamburger. Bring to a simmer, cook uncovered 15 minutes until all liquid has been reduced. Cool to room temperature. In a large serving bowl gently incorporate all ingredients, saving 1/2 cup of Western Dressing to add just before serving. Best if made several hours ahead and allowed to season through.
