Snickerdoodle Muffins

Ingredients

  • 1 1/2 cups + 2 Tb. flour
  • 3/4 cup sugar
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1/4 tsp nutmeg (freshly ground, if possible)
  • 1/2 cup milk
  • 1 beaten egg
  • 1/3 cup melted butter
  • For topping:
  • 1 tsp cinnamon
  • 1/2 cup sugar
  • 1/3 cup melted butter

Snickerdoodle Muffins

Time: 10 minutes prep, 15 minutes cook
Servings: 8 muffins
 

Directions

  1. Preheat oven to 400.
  2. Combine first five ingredients in a medium bowl. Add milk, egg, and 1/3 c. melted butter, mix gently to combine. Butter a muffin tin, and fill muffin cups 1/2 full and bake for 15-20 minutes, until tops are light brown and springy to the touch. While muffins are still warm, dip in butter and roll in cinnamon and sugar. Serve warm.

Every mother should have these in her repertoire. One bowl, pedestrian ingredients, and children absolutely love them. These are buttery, sweet, with a soft, pillow-like texture–nothing to get in the way of appreciative grunts. I doubled this recipe and got 17 muffins, so a single will probably yield 8.

    These are really yummy. I'd personally give them 4 hearts, but my kids and some guests from Japan loved them so much, that I have to give them 5 hearts. If you're cooking for kids, these are a guaranteed smash hit! Good to let kids cook themselves too, since they are so easy.

          Absolutely Awsome as my childern said.... they taste just like the cookies only change i made was using cream of tarter rather than nutmeg also sprinlke some Cinn & Sugar before baking makes them even better

              I made these this morning for breakfast and they turned out perfectly. They are tender and moist. Yet, they are a little more bland than I would like. Next time I will probably add more nutmeg and some cinnamon and/or cloves to the mix. Also, I used buttermilk in place of regular milk. My kids devoured these muffins though! Definitely a success!

                  My 19 month old son ate three of these! Only 1 of which I allowed him to eat and the other two were stolen off of the plate. Very moist but I did add a little cinnamon to the mix to give it more of a kick as others said it was a bit bland. Came out wonderful

                      These muffins are AWSOME! They taste so great and they are quick to make! I used the mini muffin pans and they cooked for 10 mins :)

                            I made these at Christmas and my family loved them. They said they are like snickerdoodles times 10!! Very moist and yummy..

                                  I love these! I make them in the mini-muffin pans so when you eat them, you get a crunch of the sugar crust in every bite.
