Ingredients

  • Fish ( pomfret / king fish ) - 300 to 400 gms , stuffed olives - 16 , baby onions - 16 , tomatoes - 2 medium sized , oil - 2 tbsps . Marinade - lemon juice - 3 tbsps, peppercorns ( crushed ) - 1 tsp , salt - to taste , ginger paste - 1 tbsp , brown sugar - 2 tbsps

Directions

  1. Clean and cut fish in fillets ( boneless flat pieces ) . Wash fish fillets and cut into one - inch sized cubes . 2. Peel and wash baby onions . Wash , cut tomatoes into halves , de- seed and further cut into one - inch sized cubes . 3. Mix lemon juice , crushed pepper , salt , ginger paste and brown sugar . 4. Skewer onto a toothpick or satay stick the marinated cubes in this order : fish cube , baby onion , stuffed olive and tomato cube . Arrange the toothpicks on a wire rack and cook on grill top and bottom for 8 minutes . 5. Baste with oil and cook on grill top and bottom for 4 minutes . Serve immediately .
