Directions

  1. Make dark brown roux with flour and oil. Add in veggies ; saute/fry till wilted.
  2. Add in bay leaf, thyme, cayenne pepper and salt. Bring turkey stock to a simmer. Add in roux/veggie mix along with meats. Bring to boil for approximately 5 min. Remove bay leaf. Add in more salt and cayenne pepper, if needed. Sprinkle with file pwdr and parsley before serving over rice.
  3. (I usually use only a healthy pinch of file pwdr per bowl)
