Directions

  1. Stir till dissolved. Allow brine to cold. Add in salmon fillets, soak covered for 3 hrs in refrigerator. Remove fillets and air dry for at least 1 hour. Smoke in a single layer for about 2 hrs at 250 degrees or possibly till hard and golden brown.
  2. NOTES : Sufficient brine for two large Salmon fillets.
