Smoked Mackerel And Banana Kedgeree

Ingredients

  • 25 gm Butter, (1oz)
  • 1 tsp Mild curry pwdr
  • 150 gm Basmati rice, cooked (5z)
  • 175 gm Smoked mackerel fillets, skinned and flaked (6oz)
  • 2 Tbsp. Freshly minced parsley
  • 4 x Bananas, peeled and sliced
  • 2 Tbsp. Lemon juice
  •     Salt and freshly grnd black pepper

Directions

  1. Heat the butter in a large pan and fry the curry pwdr for 1 minute.
  2. Stir in the remaining ingredients and cook for 2-3 min, stirring occasioanlly.
  3. Serve immediately.
  4. NOTES : A delicious fruity kedgeree with a spicy edge.
