Ingredients
- 25 gm Butter, (1oz)
- 1 tsp Mild curry pwdr
- 150 gm Basmati rice, cooked (5z)
- 175 gm Smoked mackerel fillets, skinned and flaked (6oz)
- 2 Tbsp. Freshly minced parsley
- 4 x Bananas, peeled and sliced
- 2 Tbsp. Lemon juice
- Salt and freshly grnd black pepper

Smoked Mackerel And Banana Kedgeree
Servings: 4
Directions
- Heat the butter in a large pan and fry the curry pwdr for 1 minute.
- Stir in the remaining ingredients and cook for 2-3 min, stirring occasioanlly.
- Serve immediately.
- NOTES : A delicious fruity kedgeree with a spicy edge.
