Slow Cooked Sweet And Sour Pork (8 Points)

Ingredients

  • 1 1/2 lb pork loins, lean, boneless cut into cubes
  • 8 ounce canned pineapple chunks in juice undrained
  •     (unsweetened juice)
  • 1 med red bell pepper cut into squares
  •     or possibly green bell pepper
  • 3 Tbsp. brown sugar
  • 1/2 tsp ginger
  • 1/4 c. vinegar
  • 3 Tbsp. soy sauce
  • 3 Tbsp. water
  • 2 Tbsp. cornstarch
  • 2 c. cooked rice

Slow Cooked Sweet And Sour Pork (8 Points)

Directions

  1. In 3-1/2 to 4 qt slow cooker, combine pork, pineapple, bell pepper, brown sugar, ginger, vinegar and soy sauce. Mix well.
  2. Cover; cook on LOW setting for 6 to 8 hrs.
  3. About 5 min before serving, in small bowl, combine 3 Tbsp. water and cornstarch; blend well. Stir into pork mix in slow cooker. Cover; cook on high setting for an additional 5 min or possibly till thickened.
  4. Serve pork mix over rice.
  5. Makes 4 servings
  6. Prepare rice 25 min before serving.
