Slow-cooked Drunken Cornish Hen

Ingredients

  • 1 whole Cornish game hen
  • 1 medium onion, chopped
  • 5 cloves garlic, peeled and crushed
  • 1 tbsps Olive oil
  • 1/2 cup white wine
  • 1 cup chicken broth
  • Salt and pepper to taste
  • 1 fresh sprigs rosemary

Slow-cooked Drunken Cornish Hen

Directions

  1. Season the thawed Cornish game hen with salt and pepper.
  2. Brush the hen (inside and out) with Olive oil.
  3. Place the onions on the bottom of the crock pot.
  4. Place hen on top of the onions.
  5. Sprinkle the garlic over the hen and into the crock pot.
  6. Top the hen with rosemary sprigs.
  7. Add in white wine and chicken broth.
  8. Turn crock pot on to low and cook for 6 hours.
  9. Transfer the hen into a serving platter.

Unless you're cooking for a large family and number of guests, whether it's for Thanksgiving or other holidays, a 15-pound turkey may be a bit too much. Unless, of course, you don't mind bringing turkey sandwiches to work for lunch over the following two weeks!

I've never cooked a perfect turkey on Thanksgiving, that much I can admit. So, since I've never been expected or tasked to feed a table of 10 or 12, I've always turned to the Cornish game hen for my holiday fare. It has helped me build my confidence in roasting or baking bird.

For this holiday, I wanted to do something else with my Cornish hen -- no roasting or baking, just slow-cooking. It's so much easier to prepare. Just throw everything into the crock pot, turn it on and in no time you'll be all set for dinner.

(If your crock pot is large enough, you can cook two hens at a time)
