  • 2 1/2 to 3 pound boned and tied sirloin tip roast
  • 1 med. onion, sliced
  • 1 green pepper, sliced
  • 3 bay leaves
  • 2 m. cloves garlic, slivered
  • 1 jar strained baby carrots

Directions

  1. Cut slits into the roast and insert slivered garlic, placing pieces around the whole roast.
  2. Place on roasting rack.
  3. Top roast with strained carrots and onions and peppers, lay on the bay leaves.
  4. Roast at 325 degrees till meat is done to your doneness.
  5. Serve with oven roasted potatoes and a green salad.
