Simple Sesame Green Beans

Ingredients

  • 1 tablespoon olive oil
  • 1 tablespoon sesame seeds
  • 1 pound fresh green beans, cut into 2 inch pieces
  • 1/4 cup chicken broth
  • 1 tsp fish sauce or 1/4 teaspoon salt
  • freshly ground black pepper to taste
  • 1/4 tsp crushed red pepper or 1 tsp Sriracha or other red pepper sauce (if you want a kick)

Simple Sesame Green Beans

Time: 5 minutes prep, 25 minutes cook
Servings: 4
 

Directions

  1. In a large skillet or wok, heat oil over medium heat. Add sesame seeds, and when they start to darken after 30-60 seconds, stir in the green beans. Cook, stirring, until the beans turn bright green.
  2. Pour in chicken broth, fish sauce or salt, black pepper and/or red pepper to taste. Cover and cook until beans are tender but crisp, about 10 minutes. Uncover and cook until liquid evaporates.

I realize that 5 stars is an awfully high rating for such a simple dish. But honestly, I end up eating a pound of green beans every time I make them this way. They end up so tender, and I love the simple flavor created by the sesame seeds and by steaming them in the broth. Depending on what I'm serving them with, I decide whether or not to include the red pepper sauce. You can always serve it on the side if you're not sure how spicy you want them. Enjoy!

    I really enjoy the simple, asian green bean recipe. This goes with almost anything, and the method works well with broccoli or asparagus too.
