Simple Breakfast Quiche

Ingredients

  • 8 slices bacon
  • 4 ounces shredded Swiss cheese
  • 2 tablespoons butter, melted
  • 4 eggs, beaten
  • 1/4 cup finely chopped onion
  • 1 teaspoon salt
  • 1/4 cup all-purpose flour
  • 1 1/2 cups milk
  • Variations: 1/2 cups cooked and chopped broccoli, spinach or any other vegetable. You may also substitute bacon with ham, sausage or any other meat of your choice.

Simple Breakfast Quiche

Time: 25 minutes prep, 35 minutes cook
Servings: 8
 

Directions

  1. Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.
  2. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9 inch pie pan.
  3. Line bottom of pie plate with cheese and crumbled bacon. Combine eggs, butter, onion, salt, flour and milk; whisk together until smooth; pour into pie pan. Brush egg white on trim of crust.
  4. Bake in preheated oven for 35 minutes, until set. Serve hot or cold.

          I feel sure that this recipe would have gotten four and perhaps even five hearts, except for a couple of things: one--the recipe left out the critical ingredient of a pie crust, and two--it took nearly twice as long to cook as called for in the recipe. I plan on using this recipe again but with the addition of a pie crust and will more than likely adjust my review.

            Lory and Ruth, I agree, but methinks the lady had forgotten to mention the pie crust, just a slight oversight. When I prepare pie crusts, I line my pie plates prick them, and freeze them. When a quiche needs to be made I simply take one from the freezer. Further, I would prepare a white sauce in the microwave oven with her ingredients, that will speed up the cooking time. Otherwise the recipe. Is sound and should bake around 30 minutes.

                The crust is not mentioned anywhere in the recipe except at the end of point 3, I suppose there is a pie crust bottom on which the crumbled bacon and cheese are laid and then the rest....

                  Does this quiche have a crust? The recipe is ambiguous.
