Shrimp Scampi Sandwich... Recipe

Ingredients

  • Hummus spread inside the pita: check
  • Fresh spinach stuffed on top of hummus: check
  • Fresh sprouts piled on top of spinach:
  • About a dozen or so shrimp crammed into pocket, er, sandwich: check
  • Healthy and delicious: check
  • High in protein, low in carbs: check
  • You can fool some of the people some of the time...and the mister all of the time: check
  • Shrimp Scampi Sandwich - Me
  • For the hummus:
  • 1 can (15.5 oz.) white kidney beans, drained and rinsed
  • 2 cloves garlic
  • 3 tablespoons tahini (available in most grocery stores next to the peanut butter)
  • 1/4 cup loosely packed fresh flat-leaf parsley
  • zest from one lemon
  • juice from one lemon
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 to 1/3 cup extra-virgin olive oil
  • For the sandwich:
  • 4 pita pockets
  • 16 fresh spinach leaves
  • 1 package (6 oz.) fresh sprouts (I used broccoli sprouts)
  • 48 medium shrimp, cooked, deveined, tails removed, rinsed
