  • 2-1/2 lbs red potatoes, washed and cut into chunks
  • 6 oz. plain Greek yogurt
  • 1/4 t pepper
  • 1/2 t salt
  • 2 T 2% milk
  • 1 lb lean ground beef
  • 1 onion, chopped fine
  • 3 large cloves garlic, chopped fine
  • 2 T flour
  • 3/4 c beef broth or water
  • 2 T ketchup
  • 2- 1lb packages frozen, mixed vegetables, defrosted but not cooked
  • 2 oz low fat sharp cheddar cheese, grated

Directions

  1. Wash and chop potatoes, skin on, and boil until soft. Drain and mash. Add yogurt, salt and pepper and stir to mix.
  2. Heat oven to 375 degrees.
  3. In a large skillet, brown meat with onion and garlic until cooked. Add flour and stir and cook 1 minute. Ad d beef broth or water and simmer until thickened.
  4. Spoon meat into an 8" square baking dish or a deep dish pie pan.
  5. Top meat mixture with vegetables.
  6. Cover entire top with mashed potatoes.
  7. Top with grated cheese.
  8. Bake 20 minutes until piping hot.
