This is a simple casserole that can be made with just about anything you have in your freezer or cabinets. It's a family favorite and at least once a month eat. We do the final stage in the microwave instead of the oven to be able to eat it that much quicker.

  • 1 lb any ground meat (pork, hamburger, venison, lamb and turkey alll work great)
  • 1 onion coarsely chopped
  • 1 10 oz can tomato soup
  • 1 10 oz can mixed veggies-drained or 1 10 oz bag frozen mixed veggies (or veggie of choice)
  • 1 tsp worchestershire sauce
  • salt and pepper to taste
  • Prepared instant mashed potatoes for topping (at least 6-8 servings worth
  • 2 cups shredded cheese in flavor of choice (our family prefers cojack or mild cheddar)

Directions

  1. 1. Combine the ground meat and onion. Brown in a 12" skillet. Drain grease.
  2. 2. Add your tomato soup, veggies, worchestershire sauce, salt & pepper.
  3. 3. Cook until reduced
  4. 4. Put mixture into a 2 quart casserole dish.
  5. 5. Put mashed potatoes on top. Spread to the edges.
  6. 6. Spread shredded cheese over the top.
  7. 7. Warm in 375 oven for 15 minutes until cheese is melted. Or if you prefer place in microwave and cook for 5 minutes until cheese is melted. Rotate dish halfway through cooking time.
