Scottish Shortbread

Ingredients

  • 4 sticks (2 cups) unsalted butter
  • 1 cup sugar
  • 4 Cups + 1 Tbsp all purpose flour
  • 1/4 tsp salt

Scottish Shortbread

Time: 10 minutes prep, 2 hours cook
Servings: 100 Squares
 

Directions

  1. Preheat oven to 275 degrees. In a bowl, mix sugar and butter until fluffy and creamy. Stir in the flour and salt slowly and once all the flour has been added, knead the dough with floured hands briefly on a floured surface. Press the dough into a 9x13 pan and prick it at 1/2 inch intervals with a fork. Bake the shortbread in the middle of the oven for 1 and 1/2 hours or until it is pale golden. Turn off the oven, remove the pan and cut the shortbread in the pan into 1 inch squares. Return the shortbread to the oven and let it cool completely.
