  • 1 package scalloped potatoes (4.9 oz)
  • 1/8 tsp poultry seasoning
  • 1-3/4 cup boiling water
  • 1 can cream of chicken soup
  • 2 cups chicken, cooked and chopped

I found this in an old Quick Cooking magazine and it turned out to be the perfect solution to the nights when I need a simple supper. The hubby and kids enjoyed it too.

Scalloped Chicken Supper

  • 1 package scalloped potatoes (4.9 oz)
  • 1/8 tsp poultry seasoning
  • 1-3/4 cup boiling water
  • 1 can cream of chicken soup
  • 2 cups chicken, cooked and chopped
  • 1 cup shredded carrots
  • 1/2 cup chopped celery
  • 1/4 cup finely chopped onion

Set the potatoes aside. Place the contents of the sauce mix in a large bowl; sprinkle with poultry seasoning. Whisk in the water and soup. Stir in the chicken, carrots, celery, onion, and potatoes.

Transfer to a greased 2 quart baking dish. Bake, uncovered, at 400 degrees F for 45-50 minutes or until vegetables are tender.
