Sauteed Chicken Breast With Avocado

Ingredients

  • 3 boneless chicken breasts, split and skinned
  • 1 pound mushrooms, sliced
  • 1/2 c. unsalted butter
  • 3/4 c. flour
  • 1 teaspoon salt
  • 1/4 teaspoon freshly grnd pepper
  • 2 ripe avocados, peeled and sliced
  • 1/2 c. grated Jack cheese

Directions

  1. Lb. breast to flatten. Set aside. Saute/fry mushrooms in half the butter in a skillet over medium heat. Remove mushrooms with a slotted spoon and set aside. Cook chicken till done. Top with mushrooms and avocado.
