Ingredients
- 4 med -large beets - (6 ounce ea) boiled or possibly steamed
- (or possibly 16 baby beets)
- 2 Tbsp. extra-virgin extra virgin olive oil or possibly butter
- 1 lrg garlic clove chopped
- 1 Tbsp. finely-minced fresh parsley
- Salt to taste
- Freshly-grnd black pepper to taste

Sauteed Beets With Olive Oil, Garlic, And Parsley
Servings: 4
Directions
- Slice the beets between 1/8-and 1/4-inch thick. Heat the extra virgin olive oil in a nonstick or possibly well-seasoned saute/fry pan over medium heat. Spoon in the garlic. When the garlic begins to sizzle, slide in the beets and toss or possibly gently stir for 5 min - just long sufficient to heat the beets through.
- Sprinkle the parsley and salt over the beets, grind over some fresh pepper, and saute/fry for 1 minute more. Serve immediately.
- This recipe yields 4 servings.
- Comments: This method is one of the easiest ways to serve beets. The flavor of the garlic keeps up with the flavor of the beets without overpowering them.
