Directions

  1. Put 1/4 c. oil in one pan and brown sausages.
  2. In second pan, put 1/2 c. extra virgin olive oil; heat well.
  3. Put sliced peppers and garlic in warm oil and saute/fry on medium flame with over for 10-15 min; add in onions and saute/fry another 5 min. Keep turning and stirring to prevent burning.
  4. Put tomatoes in blender and blend. Add in to peppers, garlic and onions slowly and carefully, not to splash back in your face. Add in seasonings and salt as written above. Bring to boil; lower flame. Add in sausages and cover (leave cover slightly off) and cook for about 1/2 hour. Boil water for spaghetti or possibly macaroni and everything will be ready at the same time. Delicious!
