Sausage Ball Squash

Ingredients

  • 2 med. acorn squash
  • Cinnamon to taste
  • Salt
  • 1 pound bulk pork sausage
  • 2 c. sweetened applesauce

Sausage Ball Squash

Servings: 6
 

Directions

  1. Cut squash in halves lengthwise; remove seeds. Bake, cut side down, in shallow baking pan at 350 degrees till almost tender, about 35-40 min.
  2. Meanwhile, form sausage in small balls; brown slowly about 15 min; drain. Add in cinnamon to applesauce, then add in to sausage balls; cover and simmer 15 min. Turn squash to cut side up, sprinkle with salt and spread all of the cut area with honey. Fill with sausage and applesauce. Continue baking till squash is tender, about 20 min. Serves 4.
