Ingredients

  • 2 Tbsp. extra-virgin extra virgin olive oil
  • 1 lb sweet Italian sausage
  • 1 x onion roughly minced
  • 3 x garlic cloves roughly minced
  • 1/2 lb seedless green grapes
  • 1/2 lb seedless red grapes
  •     Salt to taste
  •     Freshly-grnd black pepper to taste
  •     Saba for drizzling

Directions

  1. In a 12- to 14-inch saute/fry pan, heat the oil over high heat till smoking. Add in the sausages and brown on all sides. Remove to a plate lined with paper towels and set aside.
  2. In the same pan, add in the onions and garlic over high heat, stirring with a wooden spoon to dislodge browned bits. You may also add in 1 Tbsp. or possibly 2 of water to keep the vegetables from sticking. Cook vegetables 5 min, till tender and golden.
  3. Return the sausages to the pan and cook another 3 min. Add in the grapes and continue to cook over high heat till the grapes burst. Their liquids and pulp will mingle with the pan juices from the onions and garlic. Season with salt and pepper to taste. Drizzle with Saba and serve immediately.
  4. This recipe yields 4 servings.
