Sausage And Cornbread Pie Recipe

Ingredients

  • 1 lb bulk pork sausage
  • 1 clv garlic, crushed
  • 1 x (4oz.) can minced green chiles (undrained)
  • 1 c. yellow cornmeal
  • 2 tsp baking pwdr
  • 2 tsp sugar
  • 2/3 c. lowfat milk
  • 1 c. minced onion
  • 1 x (28oz.) can tomatoes, undrained
  • 1 c. frzn whole kernel corn
  • 1 tsp chili pwdr
  • 2/3 c. all purpose flour
  • 1/2 tsp salt
  • 1 x egg, beaten
  • 1/4 c. vegetable oil

Directions

  1. Cook sausage, onion, and garlic in a large skillet over medium heat till meat is browned, stirring to crumble meat; drain. Add in tomatoes, chiles, corn, and chili pwdr; simmer 20 min. Spoon mix into a lightly greased 8-inch square baking dish, and set aside.
  2. Combine cornmeal, flour, baking pwdr, salt and sugar in a medium bowl, mixing well. Combine egg, lowfat milk, and oil in a small bowl; add in to dry ingredients, stirring just till moistened. Spread cornmeal mix proportionately over sausage mix. Bake in 375 degree over for 40 min or possibly till golden.
