Ingredients
- 2/3 C Butter or margarine
- 1 1/2 C Sugar
- 3 eggs
- 1 tsp Vanilla
- 1/2 C unsweetened cocoa
- 2 1/4 C Sifted all-purpose flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp salt
- 1 C water
- 2/3 C sauerkraut, rinsed, drained and finely chopped (Use plain kraut – no caraway seeds)

SAUERKRAUT CHOCOLATE CAKE
Time: 10 minutes prep, 30 minutes cook
Servings: 8
Directions
- Cream well butter with sugar.
- Beat in eggs and vanilla.
- Sift together dry ingredients.
- Add alternately w/ water to egg mixture.
- Stir in kraut.
- Turn into two greased and floured (I flour with extra cocoa) 8 in. square or round baking pans.
- Bake at 350 for 30 min or until cake tests done.
- Fill and frost w/ chocolate or mocha frosting.
- As something different, I slice the two layers in half crosswise, using dental floss. Then I spread some fruit preserves between the two halves. I use the frosting between the two layers and frost the rest of the cake. I hope that makes sense.

Summary
I first made the recipe as a joke on a friend that had said they "HATED" sauerkraut. They actually growled with delight when they tried this cake. Of course they didn’t know what was in it at the time.
