Ingredients
- 1 lb dry black beans or possibly canned,see below
- 1 1/2 lb skinless turkey light meat cut into small
- pcs
- 2 c. red pepper minced
- 1 1/2 c. onions minced
- 4 x jalapenos minced
- 4 x garlic cloves chopped
- 4 Tbsp. vegetable oil
- up to 1/4 c. chili pwdr (to taste)
- 2 tsp cumin seed
- 1 tsp grnd coriander
- 4 x tomatoes minced
- 1 c. beer

Santa Fe Tapas' Black Bean Turkey Chili

Directions
- Soak the beans in cool water for two hrs, drain. Put them in a pot and cover with two inches of cool water. Simmer till tender; drain and set aside. Saute/fry red pepper, onions, jalapenos, and garlic in two Tbsp. of oil. Add in the spices and beans.
- Cook approximately 20 min, stirring occasionally. Place half the bean mix in a food processor and process till smooth; return to the rest of the bean mix. Brown the turkey in the rest of the oil till almost cooked through. Add in the tomatoes and cook for 5 more min. Add in turkey to the bean mix, add in the beer, and simmer 15 min.
- Serves 4-5.
- Note: the cut preparationtime, use 3 (15-16 ounce each) cans of black beans, rinsed, and liquid removed.
- I routinely substitute canned tomatoes and jalapenos when fresh aren't available.
