Salty Ancho Peanut Butter Cookies Recipe
Ingredients
- 1 T AP flour
- 1 t baking soda
- 1/2 t fine sea salt
- 1 t ground ancho chile pepper
- 1 cup regular (not natural) peanut butter
- 1/2 cup granulated sugar
- 1/2 cup packed dark brown sugar
- 1 large egg, lightly beaten
- 3 T finely chopped salted peanuts
- coarse turbinado sugar and coarse sea salt for sprinkling on top

%3C/p%3E%3Cp%3EThis%20is%20a%20match%20made%20in%20heaven.%20My%20version%20are%20not%20spicy,%20are%20not%20even%20that%20strong%20of%20an%20ancho%20flavor,%20but%20the%20ancho%20somehow%20brought%20out%20the%20peanut%20buttery%20goodness%20in%20the%20cookies%20and%20made%20them%20even%20more%20peanut%20buttery%20(although%20if%20you%20are%20wondering,%20I%E2%80%99d%20love%20to%20try%20a%20truly%20spicy%20version%20too,%20with%20chipotle).%20I%20was%20exclaiming%20over%20my%20new%20discovery%20when%20my%20sister%20pointed%20out%20that%20she%20had%20recently%20featured%20a%20spicy%20peanut%20butter%20cookie%20and%20I%20somehow%20missed%20it%E2%80%93bad%20sister!%20bad%20Laura!%20much%20self%20flogging%E2%80%A6but%20anyway%20hers%20use%20a%20spicy%20peanut%20butter%20and%20so%20are%20a%20bit%20different%20(and%20are%20next%20on%20my%20to%20try%20list%20because%20ohmigosh%20they%20look%20amazing).%3C/p%3E%3Cp%3EThe%20texture%20of%20these%20cookies%20are%20a%20bit%20different%20for%20me.%20They%20are%20not%20super%20chewy%20(indeed%20next%20time%20I%20might%20bake%20one%20less%20minute)%20but%20they%20are%20not%20crunchy%20or%20crispy%20either.%20Matheson%20refers%20to%20them%20as%20%E2%80%9Cairy%E2%80%9D%20and%20while%20I%20would%20not%20call%20them%20airy,%20I%20might%20call%20them%20airy%20for%20peanut%20butter%20cookies,%20if%20you%20see%20what%20I%20mean%20by%20the%20difference.%20For%20me,%20personally,%20the%20sugar%20and%20salt%20on%20top%20were%20absolutely%20necessary.%3C/p%3E%3Cp%3ESalty%20Ancho%20Peanut%20Butter%20Cookies%3C/p%3E%3Cp%3EAdapted%20from%20Salty%20Sweets,%20Christie%20Matheson%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20350%20F.%3C/p%3E%3Cp%3EWhisk%20together%20the%20flour,%20sea%20salt,%20baking%20soda,%20and%20ancho.%20Set%20aside.%3C/p%3E%3Cp%3EUsing%20a%20mixer,%20cream%20the%20peanut%20butter%20and%20sugars%20until%20smooth%20and%20creamy.%20Add%20the%20flour%20mixture%20and%20mix%20in%20until%20well%20combined.%20Add%20the%20beaten%20egg%20and%20mix%20until%20incorporated.%20Stir%20in%20the%20peanuts.%3C/p%3E%3Cp%3ERoll%20the%20dough%20into%201%20inch%20balls%20and%20place%20on%20a%20cookie%20sheet%E2%80%93I%20got%2012%20cookies%20per%20sheet%20for%20a%20total%20of%2024%20cookies.%20Flatten%20the%20balls%20slightly%20with%20a%20fork%20(but%20know%20that%20the%20tine%20marks%20will%20disappear).%20Sprinkle%20the%20tops%20of%20the%20cookies%20with%20the%20coarse%20sugar%20and%20salt.%3C/p%3E%3Cp%3EBake%20for%20about%2012%20minutes,%20until%20set%20and%20slightly%20browned.%20Let%20cool%20on%20the%20baking%20sheets%20for%201%20minute%20and%20then%20transfer%20to%20a%20cooking%20rack.%3C/p%3E){kind=link}
