%20I%20felt%20secure%20enough%20to%20give%20it%20a%20go.%20%20%20He's%20a%20meat%20master%20and%20so%20I%20trusted%20it%20and%20went%20ahead%20with%20it.%20%20I%20only%20wish%20I%20had%20the%20photos%20to%20show%20you%20of%20the%20process.%20%20%20I%20started%20this%20a%20couple%20of%20weeks%20ago%20and%20they%20got%20lost%20in%20the%20mire%20which%20is%20my%20photo%20sludge.%20%20(If%20I%20don't%20use%20them%20right%20away,%20I%20often%20lose%20them.)%20%20In%20any%20case%20all%20I%20have%20to%20show%20you%20is%20the%20end%20result,%20which%20was%20a%20delicious%20recipe%20for%20Salt%20Beef%20with%20Vegetables%20and%20a%20Parsley%20Sauce,%20adapted%20from%20the%20same%20article,%20with%20a%20few%20changes.%3C/p%3E%3Cp%3EHe%20did%20not%20use%20cabbage%20in%20his%20recipe.%20%20I%20did.%20%20%20We%20love%20cabbage%20in%20this%20house%20and%20it's%20Saint%20Patrick's%20Day.%20%20You%20just%20have%20to%20eat%20cabbage%20in%20one%20form%20or%20another.%20%20%20If%20you%20are%20not%20fond%20of%20cabbage,%20then%20I%20suggest%20you%20leave%20it%20out.%3C/p%3E%3Cp%3EOr%20maybe%20you%20just%20are%20not%20fond%20of%20boiled%20cabbage.%20If%20so,%20then%20just%20use%20a%20savoy%20cabbage,%20shredd%20it%20coarsely%20and%20then%20steam%20it%20for%20about%2010%20minutes%20over%20boiling%20water.%20%20%20Drained%20well,%20with%20a%20bit%20of%20seasoning%20and%20Bob's%20your%20Uncle.%20%20%20It's%20delicious.%3C/p%3E%3Cp%3EThe%20real%20star%20here%20is%20the%20home%20cured%20meat%20.%20.%20.%20and%20that%20lovely%20sauce.%20%20%20Just%20perfect%20with%20both%20the%20meat%20and%20the%20vegetables.%20%20You%20use%20a%20portion%20of%20the%20cooking%20liquor%20in%20the%20sauce.%20%20It%20calls%20for%20whole%20milk.%20%20I%20confess,%20I%20didn't%20have%20any%20whole%20milk%20and%20so%20I%20used%202/3%20semi%20skimmed%20milk%20and%201/3%20cream.%3C/p%3E%3Cp%3EIt%20was%20just%20fabulous%20%20.%20.%20.%20all%20of%20it%20and%20for%20a%20home%20curing%20virgin,%20I%20think%20I%20did%20a%20pretty%20darned%20good%20job%20and%20I%20will%20do%20it%20again,%20as%20%20soon%20as%20I%20can%20get%20my%20hands%20on%20some%20more%20salt%20petre.%20%20Having%20done%20it%20once%20I%20am%20not%20as%20afraid%20of%20it%20as%20I%20was%20before%20.%20.%20.%20who%20knows,%20making%20my%20own%20sauerkraut%20might%20be%20next!%3C/p%3E%3Cp%3E*Salt%20Beef%20with%20Vegetables%20and%20a%20Parsley%20Sauce*%3C/p%3E%3Cp%3EServes%206%20to%208%3C/p%3E%3Cp%3ESalt%3C/p%3E%3Cp%3EBeef%20is%20essentially%20corned%20beef.%20%20%20This%20long%20slow%20cooking%20ensures%20a%3C/p%3E%3Cp%3Etender%20piece%20of%20meat%20and%20well%20flavoured%20vegetables.%20%20%20You%20will%20need%20to%3C/p%3E%3Cp%3Euse%20some%20of%20the%20cooking%20liquid%20for%20the%20sauce.%20%20Old%20fashioned%20and%3C/p%3E%3Cp%3Edelicious.%3C/p%3E%3Cp%3Ecold,%20put%20the%20meat%20in,%20making%20sure%20it%20is%20completely%20submerged.%20%20If%20it%3C/p%3E%3Cp%3Etrys%20to%20float,%20weight%20it%20down%20with%20a%20few%20tins,%20and%20cover%20the%20pan%20with%20a%3C/p%3E%3Cp%3Etight%20fitting%20lid.%20%20Place%20in%20the%20refrigerator%20and%20leave%20for%2010%20to%2014%3C/p%3E%3Cp%3Edays.%20%20The%20thicker%20your%20piece%20of%20meat%20the%20longer%20you%20will%20want%20to%20leave%3C/p%3E%3Cp%3Eit.%20%20Longer%20is%20better%20and%20up%20to%2014%20days%20will%20ensure%20a%20proper%20cure.%20%20It%3C/p%3E%3Cp%3Eis%20important%20that%20the%20meat%20stay%20completely%20submerged.%20Once%20cured,%20it%3C/p%3E%3Cp%3Ewill%20keep%20for%20about%20a%20week%20in%20the%20refrigerator,%20or%20a%20bit%20longer%20if%20you%3C/p%3E%3Cp%3Ehave%20used%20salt%20petre.%20%20It%20will%20last%20up%20to%203%20months,%20properly%20wrapped,%3C/p%3E%3Cp%3Ein%20the%20freezer.%3C/p%3E%3Cp%3EI%20just%20have%20to%20tell%20you%20about%20this%20new%20Smokin'%20Hot%20Dog%20Sauce%20from%20Newman's%20Own.%20%20%20I%20was%20sent%20a%20bottle%20of%20it%20last%20week%20and%20we%20have%20fallen%20in%20love%20with%20it.%20%20%20It's%20absolutely%20gorgeous%20and%20went%20really%20well%20with%20the%20salt%20beef%20also.%3C/p%3E%3Cp%3EFrom%20this%20spring,%20Smokin'%20Hot%20Dog%20Sauce%20from%20all-profits-to-charity%3C/p%3E%3Cp%3Ebrand%20Newman's%20Own%20will%20be%20available%20from%20Morrisons%20stores%20here%20in%20the%20UK.%20%20Available%20later%20this%20month,%20the%20sauce%20will%20launch%20in%20time%20for%20the%20summer%20BBQ%20season%20and%20will%20form%20part%20of%20a%20new%20American%20Condiments%20range%20to%20be%20rolled%20out%20throughout%20the%20year.%20%20This%20is%20only%20the%20first%20thing%20of%20what%20will%20be%20a%20few%20products.%3C/p%3E%3Cp%3EI%20have%20to%20say%20it's%20the%20most%20delicious%20hotdog%20sauce%20I%20have%20ever%20eaten.%20%20We%20had%20it%20with%20some%20of%20our%20salt%20beef%20of%20course,%20but%20we've%20also%20enjoyed%20it%20on%20a%20few%20hot%20dogs,%20and%20in%20truth%20I%20could%20eat%20the%20stuff%20with%20a%20spoon.%20%20It's%20sweet,%20and%20smoky%20and%20has%20some%20sassy%20spice%20going%
