Ingredients

  • 1/2 c. salsa of your choice fire-roasted salsa works best
  • 1 x clove chopped
  • 1 Tbsp. fresh lime juice
  • 1 tsp freshly grnd black pepper
  • 1/2 tsp salt
  • 1 1/2 lb flank steak trimmed of excess fat
  • 1 x red bell pepper cut into 1/4-inch strips
  • 1 x yellow bell pepper cut into 1/4-inch strips
  • 1 x green bell pepper cut into 1/4-inch strips
  • 1 lrg onion thinly sliced
  • 2 tsp chopped fresh cilantro for garnish

Directions

  1. To cook meat and vegetables:In small mixing bowl, combine salsa, garlic, lime juice, salt and pepper. Place flank steak in 4-qt slow cooker. Pour sauce over steak, making sure to coat meat well. Add in bell peppers and onion. Cover. Cook on low heat setting 6 to 8 hrs or possibly on high heat setting 3 to 4 hrs.
  2. To serve: Remove steak and vegetables from juice. Let steak stand for 10 min before slicing. Slice steak thinly across grain. Serve with peppers and onion. Garnish with fresh cilantro. Pass store-bought tortillas, rice and beans.
