This is a quick and easy breakfast, lunch or dinner. Serve with fresh fruit for breakfast, nice salad, veggies and/or bread for lunch or dinner. My 6 yr old son thinks its a crabcake pie, that's ok with me if it gets him to eat it. I use cleaned canned salmon if you don't mind cleaning and deboning you can get 1 lg can of uncleaned salmon.

Ingredients

  • 1 - Unbaked deep dish pie crust 9" or 10"
  • 1 large sweet onion diced
  • 1-2 tbsp of butter
  • 2 cups of grated swiss cheese
  • 2 - 5oz cans of deboned cleaned Salmon
  • 3 eggs
  • 1/2 cup Mayo
  • 1 cup half n half (milk is okay too)
  • 2-3 tbsp cornstarch
  • salt and pepper, lemon pepper

Directions

  1. Preheat oven 350
  2. Poke holes in the frozen pie shell along the bottom and sides and set aside
  3. Diced the onion and saute in the butter till soft and tender and a bit of salt and pepper. Remove from heat.
  4. Drain salmon (clean if needed) flake it into the onions and butter.
  5. In a med bowl whisk eggs and mayo then whisk in half and half and cornstarch. Add more salt and lemon pepper to taste.
  6. Stir half the swiss cheese into the salmon onion mixture and pour into pie shell.
  7. Add remaining cheese to the egg mixture and pour over salmon. Carefully move salmon mixture around to even out.
  8. Bake for 45 to 50 mins till top is lighty browned and toothpick in center is clean
  9. Remove from oven and let cool 10-15mins
  10. Serve warm, room temp or chilled however you like it!
  11. I place the pie shell on a baking sheet, and I place foil under the pie and fold the edges up creating a bowl effect. Its good for any spills or boils overs easy clean up.
