Salmon Patties

These are perfect for Lent and easy to make, a squirt of lemon or a lemon sauce completes the dish

Ingredients

  • 1 (14.7) can of salmon
  • 1 Egg
  • 1 Small onion chopped
  • 1/2 Cup Italian Bread crumbs
  • 2 Tbs. Chopped fresh mint

Directions

  1. Blend salmon, egg, onion, bread crumbs and chopped mint in a large bowl. Make into balls using an ice cream scoop, so it is consistent in size, pat the balls down.
  2. Dust with flour and place in warm cast iron pan with 2 tablespoon of olive oil.
  3. Cook until brown
