Salami Spiked Burgers w/Grilled Green Onions on Toasted Sourdough Recipe

Ground chuck and Genoa salami team up for not just another burger recipe. Traditional mustard, ketchup and American cheese tag along with sassy grilled onions to create this burger that will make your mouth cry! Let me not fail to mention a slathering of my homemade Balsamic Mayonnaise.

Ingredients

  • 2 1/2 1lbs. ground chuck
  • 3 oz. deli style Genoa salami, chopped
  • 1/4 cup Heinz Chili Sauce
  • 1 tsp. ground mustard
  • 1 tsp.smoked paprika
  • 1 tbsp. onion powder
  • 1 tbsp. olive oil, plus more for drizzling
  • 12 slices American cheese
  • 12 slices tomato
  • 1 pkg. green onions, trimmed
  • 1 large square store-bought sourdough bread
  • ketchup, mustard, and balsamic mayonnaise*
  • kosher salt and cracked black pepper to taste

Directions

  1. []Preheat grill pan or cast iron skillet to medium-high.
  2. Preheat oven to broil.
  3. In a large bowl, add beef, salami, chili sauce, ground mustard, paprika,onion powder and 1 tbsp. olive oil. Add kosher salt and pepper to taste. Mix until just blended and form 6 patties of equal size, making a small impression in center slightly thinner than the outer edges of meat.
  4. Place burgers on grill or cooking vessel. Cook to desired done-ness, flipping once, roughy 5-6 minutes each side for medium well to well done.
  5. Once burgers have been flipped, drizzle green onions with olive oil and a pinch of salt and add to grill.
  6. Meanwhile, halve sourdough square and create slices of about 1/2 inch thickness from each half. You want 12 good slices total. Drizzle with olive oil and broil until lightly toasted.
  7. Assembly: Spread 1 1/2 tsp. balsamic mayo on bottom slice of sourdough. Add 2 slices tomato, burger, 2 slices cheese and
  8. an equal portion of the onions. Top with a dollop of mustard and ketchup and end with slice of sourdough. Repeat until all 6 burgers are
  9. assembled.
  10. *condiments may be omitted if desired. Regular mayonnaise may be substituted for balsamic mayonnaise or omitted altogether.

    This grilled burger is amazing as the carmelization of the outer surface gives the salami studs a crisp smoky appeal of bacon.
