Sabretts' Onions In Sauce (For Hot Dogs)

Ingredients

  • 1 1/2 tsp extra virgin olive oil
  • 1 med onion sliced thin,
  •     and minced
  • 4 c. water
  • 2 Tbsp. tomato paste
  • 2 tsp corn syrup
  • 1 tsp cornstarch
  • 1/2 tsp salt
  • 1/4 tsp crushed red pepper flakes
  • 1/4 c. vinegar

Directions

  1. Heat the oil in a large saucepan over medium heat. Saute/fry sliced onion in the oil for 5 min, till onions are soft, but not brown. Add in water, tomato paste, corn syrup, cornstarch, salt and red pepper flakes, and stir. Bring mix to a boil, then reduce heat and simmer for 45 min.
  2. Add in vinegar. Continue to simmer for an additional 30 to 45 min or possibly till most of the liquid has reduced and the sauce is thick.
  3. This recipe yields about 1 c..
  4. Yield: 1 c.

You find hundreds of 'em in New York City, especially around Central Park (which's where the sample for this recreation was obtained).
