These S’Mores Brownies Dipped in Chocolate came about because of cleaning out my cupboards several months ago. Right when I was ready to share them I received a large box of chocolate products from Hershey’s via Allrecipes. My participation in the campaign required that I choose from a pre-selected number of recipes. None of the recipes listed used Hershey’s S’Mores Baking Chips but they were included in the box of goodies I received. Although I was bummed at the time, I’m happy that it turned out that way. I had already started on the post, the pictures were taken, and edited. After an almost two-week blogging layoff, it’s good to have something ready to share. After I purged my cupboards, I bought two boxes of brownie mix, just because. That’s how I always end up having to cull my supplies. About the same time, I was testing a recipe and grabbed what I thought was two boxes of cake mix. Nope, I grabbed the brownie mixes. After I dumped both boxes into the mixing bowl I looked on the back of the box, seen the ingredients to be added and realized what I had done. The brownie mixes went into a gallon size zippered bag with the instructions taped to the back. The mix sat on a shelf for almost two months. During one of my grocery store trips, there was a box of Hershey’s Smores Baking Chips marked down to the rock-bottom price of .84. I restrained myself and only bought two bags because I had a recipe in mind. One that would use my stored brownie mix. My big idea was to add the S’mores Baking Chips to the brownie mix, cut them into rounds and somehow add in white and dark chocolate. This was also another opportunity for me to use my shiny new OXO nonstick jelly roll pan. I stirred the baking chips into the brownie batter after the wet ingredients were added. After spreading the loaded brownie mix into the pan I was worried that it would spill over. That was a worry unfounded because they rose and baked perfectly. After they cooled to room temperature I covered the pan with plastic wrap and let them sit overnight. The next day I used a 3-inch round cookie cutter to cut out approximately 15 rounds. Those babies were thick and gooey just as they should be. They were made even more decadent with the milk chocolate chips, graham cookie pieces and mini marshmallows from the S’Mores Baking Chips. These over the top brownies were fine just as is, but you know me I had to take them way over the top. Back to my bulging cupboards. In them I found, half bags of semi-sweet and milk chocolate chips, a zippered bag of semi-sweet chocolate squares left from a previous baking session, plus leftover white chocolate from a cake I baked a few days before. The plot thickens; along with my waistline because I tasted way too many. Anyway, I melted the semi-sweet chips and dipped the bottoms of the brownies into the hot melted chocolate. Once it cooled and hardened slightly I melted the white chocolate and drizzled it over the top. Not wanting to waste the pieces of brownies left after cutting the rounds, I had another idea. The leftover pieces were rolled into balls and dipped into the rest of the melted chocolate. I inserted a lollipop stick and voila, I was done! Even though the holiday has passed you can pin these babies to your holiday Pinterest board or bake them now. The weather here and in many parts of the country is dreadfully cold and S’Mores Brownies Dipped in Chocolate with a hot beverage sounds pretty good right about now.
