Making grapefruit cocktails

The folks at Wonderful sent me some of their Sweet ScarlettsTM Texas Red Grapefruits to try out along with some recipe cards, which you can win below!

One cocktail was called “Scarletts Kiss,” which was made with gin and a simple syrup made with tarragon. I’m not a gin drinker, so I passed on that one. Then there was another called “Sweet Texas” made with silver tequila, Campari, and ginger simple syrup. I’m not a huge fan of Campari.

Actually, my favorite grapefruit cocktail is a greyhound, which is a mixture of vodka and grapefruit juice. What I especially like about it is that it’s easy to make and that you don’t have to sweeten it with a simple syrup. No extra calories! But how to put an special spin on it without complicating it too much?

I love adult fruit smoothies and blender cocktails, so my twist on the classic greyhound cocktail is the Rosie Red Greyhound Cocktail. I’ve taken a Wonderful Sweet Scarletts Texas Red Grapefruit and processed it in a blender to make a fresh, frothy and sweet grapefruit juice to mix with vodka. No need to mess with a juicer, strainer, or even a can! Just chill, peel, blend, mix and you’re ready to go!

This way you also have the health benefits of the fiber and juice of the Sweet Scarletts Texas Red Grapefruit, so you don’t feel too guilty about indulging in a cocktail. Also, no added sugar or simple syrup, since Sweet Scarletts Texas Red Grapefruit is naturally sweet!

For fun, I used a sprig of rosemary from the garden as a swizzle stick. It’s the only herb in my garden that survives the winter, and I love the color and smell. I even know of a business in town that has a rosemary bush in front of it that’s the size of a small Volkswagen Beetle!

Rosie Red Greyhound Cocktail

Ingredients

1 Wonderful Sweet Scarletts Texas Red Grapefruit

Vodka (Stolichnaya is still my favorite)

2 to 4 rosemary sprigs

Directions

Place the Wonderful Sweet Scarletts Texas Red Grapefruit in your refrigerator for several hours until it’s nice and cold.

Remove the grapefruit from the refrigerator, then quickly peel it, removing extra pith and seeds.

Place in a blender or food processor and pulse until frothy.

Pour 1 part vodka to 2 parts grapefruit froth into a cocktail glass. (Picture above shows 2 ounces vodka to 4 ounce grapefruit froth.) Add rosemary sprig and serve.

Total Time: 2 Hours 5 Minutes

Servings: Makes 2 to 4 cocktails
