  • 4 medium potatoes
  • 2 cups broccoli
  • 1 tablespoon margarine
  • 2 teaspoons olive oil
  • 3 tablespoons chives
  • salt and pepper to taste

There are times, we want a simple but tasty recipe. I am working on adding additional vegetables to our meals So it was natural to seek for a veggie that was not time consuming in preparation but yummy in the resulting dish.

I mentioned the other day, the blog, "For the Love of Cooking", which I found. There were lots of side dishes, easy to make, looking delicious, waiting to meet the challenge. I found one with two of my favorite foods - no not chocolate --- potatoes and broccoli. It was surprisingly flavorful and the potatoes took on a light taste from the broccoli.

Roasted Potatoes with Broccoli

  • 4 medium potatoes
  • 2 cups broccoli
  • 1 tablespoon margarine
  • 2 teaspoons olive oil
  • 3 tablespoons chives
  • salt and pepper to taste

Place potatoes in large bowl with hot water.

Place in microwave and cook on high for three minutes. Your microwave may take a different amount of time. Of course, you can boil this, in a saucepan, on the stove for five to ten minutes.

Remove potatoes from water and allow to cool, on the side.

When cool, slice in wedges.

In a glass measuring cup, combine soy sauce, butter, chives, olive oil, salt and pepper. Mix well.

Pour over potatoes and bake for 20 minutes.

Remove from oven and add broccoli. Stir potatoes and broccoli together coating both.

Place back in the oven and cook for another ten minutes.

Sit down and eat and enjoy. This had more flavor than I would have guesssed.
