Roasted Cornish Games Hens (Poussin) with Red Wine Recipe

%20damaged%20Cornish%3C/p%3E%3Cp%3EGames%20Hens....%20Missing%20a%20wing%20or%20a%20leg.%3C/p%3E%3Cp%3EEvery%3C/p%3E%3Cp%3ESunday%20we%20would%20spend%20about%20an%20hour%20cleaning%20their%20apartment%20and%203%3C/p%3E%3Cp%3Ehours%20fixing%20the%20fanciest%20dinner%20we%20could%20come%20up%20with%20using%20whatever%3C/p%3E%3Cp%3Efoods%20Mom%20had%20sent%20down%20that%20week.%3C/p%3E%3Cp%3EAfter%20I%20grew%20up,%20got%20a%20place%20of%20my%20own%20and%20started%20entertaining,%20Cornish%20Hens%20became%20my%20signature%20dish.%3C/p%3E%3Cp%3EThey%20were%20easy%20to%20make%20-%20just%20pop%20them%20in%20the%20oven.%3C/p%3E%3Cp%3EThey%20were%20impressive%20to%20serve%20-%20each%20diner%20getting%20their%20own,%20perfectly%20(I%20hoped)%20roasted%20little%20bird.%3C/p%3E%3Cp%3EThey%20were%20cheaper%20than%20the%20other%20popular%20dinner%20party%20item%20of%20the%20time:%20steak.%3C/p%3E%3Cp%3EAnd.....%3C/p%3E%3Cp%3ENo%20one%20else%20did%20them.%3C/p%3E%3Cp%3EI%20had%20found%20a%20niche.%3C/p%3E%3Cp%3EWe%20can't%20get%20them%20here.%20%20We%20can%20get%20little%20chickens%20or%20coquelet.%20%20They%20are%20about%20the%20same%20size%20as%20a%20Cornish%20Hen,%2016oz%20(500gr)%20each....%3C/p%3E%3Cp%3EPerfect%20for%20individual%20servings.%3C/p%3E%3Cp%3ERoasted%20Cornish%20Games%20Hens%20(Poussin)%20with%20Red%20Wine%3C/p%3E%3Cp%3EWash%20hens%20and%20pat%20dry%20with%20paper%20towels.%20Mix%201%20tbs%20oil%20with%20lemon%20juice%20and%201%20tsp%20each%20of%20the%20herbs.%20Divide%20herb%20mixture%20and%20put%20half%20into%20each%20of%20the%20hens.%20Tie%20legs%20close%20and%20bend%20wings%20around%20and%20under%20the%20back%20-%20so%20it%20looks%20like%20they%20are%20lying%20there%20with%20their%20arms%20akimbo.%20It%20keeps%20them%20from%20flapping%20and%20gives%20the%20hen%20something%20to%20rest%20on.%20Lay%20them%20on%20a%20rack%20in%20a%20shallow%20baking%20pan.%20Mix%20the%20remaining%20oil,%20herbs,%20mustard%20and%20red%20wine%20and%20brush%20on%20hens.%20Put%20into%20400F%20(200C).%20Bake%20for%2050%20-%2060%20minutes,%20basting%20every%2015%20minutes%20with%20wine%20mixture,%20until%20done.%20%20I%20recommend%20a%20meat%20thermometer.%3C/p%3E%3Cp%3EFor%20those%20who%20don't%20know%20-%20I'm%20giving%20away%20a%20cook%20book.....%3C/p%3E%3Cp%3ESee%20the%20prior%20post%20for%20details%20on%20how%20to%20enter%20the%20contest.%3C/p%3E){kind=link}
