%3C/p%3E%3Cp%3E*Roast%20Rack%20of%20Pork%20with%20Fennel%20and%20Honey%20Mustard*%3C/p%3E%3Cp%3EServes%204%20to%206%3C/p%3E%3Cp%3EThis%20may%20seem%20a%20bit%20fussy%20at%20first,%20but%20it's%20really%20quite%20simple%20and%20the%20flavours%20are%20beautiful.%20Have%20your%20butcher%20prepare%20you%20rack%20of%20pork%20by%20cutting%20it%20away%20from%20the%20bone,%20leaving%20it%20attached%20only%20at%20the%20bottom.%20Roasting%20with%20the%20bone%20adds%20extra%20flavour,%20although%20to%20be%20sure%20you%20can%20use%20a%20boneless%20pork%20loin%20if%20you%20wish.%3C/p%3E%3Cp%3EPre-heat%20the%20oven%20to%20200*C/400*F.%20Place%20the%20vegetables%20in%20a%20medium%20sized%20roasting%20tin.%20Season%20with%20some%20salt%20and%20pepper,%20turning%20to%20coat%20them.%20Place%20the%20rosemary%20springs%20in%20between%20the%20bone%20and%20the%20flesh%20of%20the%20pork%20roast.%20Set%20this%20on%20top%20of%20the%20vegetables.%20Season%20the%20roast%20all%20over%20with%20salt%20and%20pepper.%20Drizzle%20the%20olive%20oil%20over%20the%20meat%20and%20vegetables%20and%20then%20pour%20the%20water%20and%20wine/juice%20around%20the%20base.%20Tuck%203%20of%20the%20springs%20of%20sage%20into%20the%20vegetables%20along%20with%20the%20bay%20leaves.%20Place%20the%20last%20spring%20of%20sage%20on%20top%20of%20the%20roast.%3C/p%3E%3Cp%3EPlace%20in%20the%20oven%20and%20roast%20for%201%201/4%20hours,%20basting%20the%20vegetables%20and%20meat%20with%20the%20juices%20several%20times.%20By%20the%20end%20of%20the%20cooking%20time%20the%20potatoes%20should%20be%20juicy%20and%20crispy%20on%20the%20outside,%20and%20the%20meat%20should%20be%20golden%20and%20cooked%20through.%3C/p%3E%3Cp%3EMix%20the%20honey%20and%20mustard%20together%20and%20spread%20this%20over%20the%20top%20of%20the%20roast.%20Return%20to%20the%20oven%20and%20cook%20for%20another%2020%20to%2025%20minutes%20until%20the%20fat%20on%20the%20meat%20is%20nicely%20glazed.%20Remove%20from%20the%20oven.%20Tent%20with%20some%20foil%20and%20allow%20to%20rest%20for%2015%20minutes%20before%20serving.%20Cut%20the%20meat%20off%20the%20bone%20totally%20and%20cut%20the%20bone%20pieces%20between%20the%20ribs.%20Cut%20the%20meat%20into%20pork%20chop%20sized%20pieces.%20Place%20the%20meat%20in%20the%20centre%20of%20a%20platter%20along%20with%20the%20bones,%20and%20surround%20with%20the%20vegetables%20to%20serve.%20Drizzle%20some%20of%20the%20honey%20juices%20over%20all.%3C/p%3E){kind=link}
