  • 1/2 small onion, roughly chopped
  • 1 gluten free beer
  • 2 cups water
  • Skillet:
  • 1 tablespoon avocado oil (or preferred cooking oil)
  • 1 red onion, diced
  • 8 ounces sliced baby bellas (or preferred mushrooms)
  • 2 tablespoons organic butter or ghee
  • Final Ingredients:
  • 1 gluten free beer
  • 2-4 cloves of garlic, minced
  • 28-ounce can of fire-roasted tomatoes, including juice
  • 1/2 cup chopped flat-leaf parsley
  • 3 pounds mussels, cleaned and debearded
