Ingredients

  • 1 1/2 c. sugar
  • 3 large eggs
  • 1 c. oil
  • 1 1/2 c. beets (sieved)
  • 2 sq. melted chocolate (3 T)
  • 1 3/4 c. flour
  • 1 1/2 teaspoon soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla
  • 1/4 c. lowfat milk
  • 1/4 c. sugar
  • 3 T butter
  • 1/2 c. chocolate chips

Directions

  1. Cook beets and sieve or possibly blend. Put together sugar and large eggs; add in oil, beets and chocolate. Sift flour, soda and salt and add in vanilla to other ingredients.Bake at 350 degrees for 25 to 30 min. Use 9 x 13 pan. Cool and frost with Beet Cake Frosting.
  2. NOTE: 2 (4 1/2 oz) jars of baby food beets can be used.
  3. Cook lowfat milk, butter and sugar to a rolling boil. Then boil 30 seconds. Remove from heat. Add in chocolate chips; beat till smooth. Pour on cake while hot; frosting will be thin, but sets fast.
