Cooks look for inspiration anywhere they can. I first had this dish 30 + years ago at the Cannery in San Francisco. We were wondering around in the shops and smelled this amazing smell drifting up from the courtyard. A Vietnamese gentleman was grilling these chicken thighs and serving them on sourdough bread. For a couple of bucks we had one of the best meals in San Francisco, and that is saying a lot. I have been serving them since.
Don’t worry if you can’t find thighs with the skin on; skinless, boneless thighs work just as well, just marinate them longer and they will be tender and juicy.

chicken thighs, boneless
Place all ingredients in a large plastic bag. Squeeze the lime juice into the bag then put the whole lime in as well. Seal bag and place in refrigerator for at least 1 hour, turning several times. Remove chicken thighs and place on a grill or under a broiler, cook until done, about 10-15 minutes. Serve with rice, salad and some crunchy bread.
