%E2%80%A6%20there%20was%20this%20great%20restaurant%20just%20across%20the%20street%E2%80%A6%20the%20famous%20Junior%E2%80%99s%20restaurant%E2%80%A6.%20they%E2%80%99re%20still%20there%E2%80%A6.they%20have%20the%20best%20cheesecake%20and%20%E2%80%A6.%20you%20guessed%20it%E2%80%A6%20onion%20rings%E2%80%A6%20I%20used%20to%20eat%20lunch%20there%20%E2%80%A6%20and%20split%20either%20a%20cheesecake%20slice%20or%20a%20plate%20of%20onion%20rings%20with%20a%20friend%E2%80%A6%20the%20waiters%20thought%20we%20were%20crazy%E2%80%A6%20we%E2%80%99d%20each%20order%20a%20small%20salad%20and%20share%20the%20onion%20rings%20or%20cheesecake.%3C/p%3E%3Cp%3EWhen%20I%20got%20married%20and%20moved%20out%20of%20the%20New%20York%20area,%20I%20began%20my%20quest%20to%20find%20someplace%20that%20made%20the%20onion%20rings%20the%20way%20the%20diners%20did%20in%20New%20York.%20I%20simply%20couldn%E2%80%99t%20find%20any%20place%20that%20served%20them%20like%20they%20did%20in%20New%20York.%20I%20finally%20gave%20up%20and%20started%20my%20quest%20to%20find%20a%20recipe%20that%20I%20liked.%3C/p%3E%3Cp%3EI%20found%20that%20my%20recipe%20came%20close%20but%20it%20still%20didn%E2%80%99t%20produce%20that%20wonderful%20%E2%80%9Cpuffed%20up%E2%80%9D%20onion%20ring%20I%20loved,%20then%20I%20read%20that%20adding%20beer%20instead%20of%20water%20or%20milk%20would%20do%20the%20trick%E2%80%A6%20the%20onion%20rings%20improved.%20%E2%80%A6%20but%20were%20still%20not%20perfect.%3C/p%3E%3Cp%3EThen%20I%20saw%20Rachael%20Ray%20use%20pancake%20mix%20(complete)%20and%20beer%20and%20I%20thought%20nothing%20ventured%20nothing%20gained%E2%80%A6.%20I%20tried%20it%20and%20viola!%20%E2%80%A6.%20I%20found%20the%20recipe%20that%20worked.%20For%20some%20reason%20the%20pancake%20mix%20made%20a%20better%20batter%20than%20doing%20it%20from%20scratch%E2%80%A6%3C/p%3E%3Cp%3ERachael%20Ray%20uses%20a%20number%20of%20spices,%20which%20I%20tried%E2%80%A6%20but%20have%20since%20removed%20from%20the%20recipe%E2%80%A6.%20I%20frankly%20couldn%E2%80%99t%20taste%20the%20spices%20and%20feel%20they%E2%80%99re%20unnecessary.%20I%20also%20find%20the%20batter%20needs%20more%20beer%20to%20get%20the%20right%20consistency.%3C/p%3E%3Cp%3ETIP:%20Use%20a%20large%20skillet%20as%20opposed%20to%20a%20deep%20pot%E2%80%A6.%20the%20surface%20area%20is%20larger%20and%20will%20make%20it%20easier%20to%20fit%20the%20onion%20rings%20in%20the%20oil.%3C/p%3E%3Cp%3ESo%20here%20is%20the%20best%20beer%20batter%20onion%20ring%20recipe%20I%20have%20yet%20to%20come%20up%20with%E2%80%A6.%20If%20you%20like%20that%20doughy%20thick%20batter%20fried%20onion%20ring%E2%80%A6%20this%20recipe%20is%20for%20you.%3C/p%3E%3Cp%3EEnjoy!%3C/p%3E%3Cp%3ERecipe:%20Beer%20Batter%20Onion%20Rings%3C/p%3E%3Cp%3EAll%20you%20need:%3C/p%3E%3Cp%3EAll%20you%20need%20to%20do:%3C/p%3E%3Cp%3ELine%20a%20large%20cookie%20sheet%20with%20paper%20towel%20and%20set%20aside.%3C/p%3E%3Cp%3EMelt%20vegetable%20shortening%20or%20heat%20oil%20in%20a%20large%20skillet%20over%20medium%20high%20heat.%3C/p%3E%3Cp%3EMake%20sure%20you%20have%20about%201-1%20%C2%BD%20inches%20of%20oil.%20NEVER%20LEAVE%20THE%20OIL%20UNATTENDED.%3C/p%3E%3Cp%3EIn%20a%20medium%20bowl,%20combine%20the%20pancake%20mix,%20salt%20and%20beer.%20Stir%20until%20you%20have%20a%20thick%20batter.%3C/p%3E%3Cp%3ETest%20the%20oil%20by%20dropping%20a%20tiny%20drop%20of%20batter%20in%20it%E2%80%A6%20when%20it%20floats%20and%20bubbles%E2%80%A6%20your%20oil%20is%20hot.%3C/p%3E%3Cp%3EDip%20the%20onion%20rings%20in%20the%20batter.%20Make%20sure%20the%20ring%20is%20completely%20covered%E2%80%A6.%20as%20you%20pull%20it%20out%20of%20the%20batter%E2%80%A6%20let%20the%20excess%20drip%20off.%3C/p%3E%3Cp%3EDrop%20the%20battered%20onion%20ring%20in%20the%20hot%20oil.%3C/p%3E%3Cp%3EThe%20rings%20will%20puff%20up%20and%20brown%20on%20the%20bottom%20side,%20carefully%20flip%20them%20over%20to%20brown%20the%20other%20side.%3C/p%3E%3Cp%3EWhen%20both%20sides%20are%20browned,%20remove%20the%20onion%20ring%20to%20the%20paper%20towel%20to%20drain.%3C/p%3E%3Cp%3EWhen%20all%20onion%20rings%20have%20been%20fried,%20remove%20skillet%20from%20heat%20and%20allow%20the%20oil%20to%20cool%20completely%20before%20discarding.%3C/p%3E){kind=link}
