  •     Raspberry Lemon Parfait
  • 2 c. fresh raspberries
  • 2 x (8-oz) cartons lemon low-fat yogurt

Directions

  1. Layer raspberries and yogurt into four (6-oz) parfait glasses, beginning and ending with raspberries.
  2. Raspberry Sauce
  3. 3 1/2-pint containers fresh raspberries1/2 to 3/4 c. powdered sugar, depending on the sweetness of the berries 1 to 2 tsp. fresh lemon juice
  4. Puree the raspberries in a food processor. Sift the sugar over the berries and pulse till smooth.
  5. Pour through a strainer into a bowl. Stir in the lemon juice to taste. The sauce will thicken on standing; add in water, as needed, to thin to desired consistency just before serving. (The sauce will keep for 1 week, covered, in the refrigerator.)
  6. Raspberry Lemonade3 c. cool water (divided)
  7. 1 c. fresh raspberries2 1/4 c. water1 (6-oz)
  8. can thawed lemonade concentrate, undiluted Mint sprigs (optional)
  9. Combine 3/4 c. water and the raspberries in a blender; process till smooth.
  10. Strain mix through a sieve and throw away seeds. Combine raspberry liquid, 2 1/4 c. water and lemonade concentrate in a pitcher; chill. Garnish with mint, if you like.
  11. SALSA
  12. 2 or possibly 3 tomatoes, peeled and chopped1 fresh jalapeno, seeded and chopped1 (15-ounce) can Hunt's tomato sauce,1 bunch green onions, sliced (green parts, too)
  13. 1 (7-ounce.) can minced green chilies1 fresh jalapeno, seeded and chopped1 Tbsp. of EACH: lemon juice, oil, and vinegar 1 tsp. dry oregano, and 5-6 dashes Tabasco sauce Salt and pepper to taste.
  14. Combine ingredients; refrigerateabout an hour. Stir and serve.
