Okay, guys, curious to hear how many of you have air fryers?  I just got one a couple of months ago and I think I might have an air fryer addiction. I swear, I drag the thing out DAILY.  I normally keep my most used appliances out on the counter (my KitchenAid, food processor, and Instant Pot), but I just don’t think I have the space to add another appliance to my counter tops without it feeling super cluttered. I might just swap out the Instant Pot for the air fryer – I certainly use it more lately!    Curious to hear which you guys use more often – the Instant Pot or the air fryer? Or do you just stick your stove and oven? 😉  Anyway, these air fryer potatoes are roasted to perfection in just 20 minutes, which I freaking love. The outsides get a bit crisp and the insides are all soft and pillowy.  My ranch seasoning is homemade, but don’t let that scare you – it’s just a few herbs and spices that any well stocked kitchen would have on hand! I think you’re going to love these air fryer roasted potatoes! How to make air fryer potatoes:  First up, you’ll want to wash and halve 1 1/2 pounds of small yukon gold potatoes.  Drizzle them with some oil. I am a big fan of avocado oil lately. It’s a neutral oil that can withstand high temperatures making it perfect for roasting. I use this brand (affiliate link).  Next, start dumping on the seasoning. We’re using a blend of garlic powder, onion powder, paprika, chives, parsley, dill, and salt. Simple, but tasty. Stir your potatoes and pop them in your preheated air fryer for 20 minutes. You’ll want to shake the basket every 5 minutes for even cooking. So simple and the texture is perfect! How to roast potatoes in the oven:  To make these ranch potatoes in the oven, you’ll follow the same steps as above, but instead of using an air fryer place your potatoes on a large rimmed sheet pan. Roast at 400 degrees for about an hour, stirring 3 or 4 times throughout cooking. Roasting potatoes in the oven takes quite a bit longer than using an air fryer, but they come out just as delicious!  What to serve with roasted potatoes:  Turkey Meatloaf: Meatloaf + roasted potatoes is a classic!
