Quiche Aux Fruits De Mer

Ingredients

  • 1 (9 inch) pastry shell, partially baked
  • 2 T chopped green onions
  • 3 T butter
  • 1/4 pound (1 c.) cooked fresh shrimp, crab & lobster combination
  • 2 T Madeira
  • 1/4 c. grated Swiss cheese
  • 3 lg. large eggs
  • 1 c. heavy cream
  • 1/4 teaspoon salt
  • Healthy pinch of pepper
  • 2 T white wine

Directions

  1. Cook onions in butter 1 to 2 min. Add in fish and stir 2 min. Add in pepper and white wine. Raise heat and boil 1 minute. Allow to cool slightly. Beat large eggs, cream and seasonings. Gradually add in fish mix. Pour egg-fish mix into pastry shell and sprinkle with cheese. Bake at 375 degrees for 25 to 30 min. Serves 4 to 6.
