Pumpkin Sago Dessert

Simple dessert with five ingredients; pumpkin, sago, coconut milk, pandan/screwpine leaves and palm sugar.

Ingredients

  • (estimates; adjust accordingly)
  • 1/4 pumpkin - remove skin, seeds and cut into medium size pieces
  • 1/2 cup sago - soaked for 1/2 hour and rinsed with water
  • 1 cup coconut milk
  • 1 medium piece palm sugar
  • 4 to 5 pandan/screwpine leaves

Directions

  1. Simmer sago with water till translucent.
  2. Drain off water, rinse and keep aside.
  3. Put pumpkin and pandan leaves in a pot with enough water (about 2 cups)
  4. Simmer till tender.
  5. Remove leaves and add translucent sago.
  6. Stir and pour coconut milk.
  7. When heated through, remove from heat.
  8. Simmer palm sugar with enough water for a thick syrup.
  9. Serve pumpkin sago with it.
  10. (Note: alternatively, palm sugar can be added while simmering pumpkin).
