Ingredients

  • 1 can Pumpkin Pie Filling -- * see
  •     Note
  • 1 c. Brown Sugar
  •     Egg Beaters. 99% Egg
  •     Substitute -- for 2 Large eggs
  • 1 1/2 c. Flour
  • 1 tsp Baking Soda
  • 1 tsp Cinnamon
  • 1/2 tsp Nutmeg
  • 1/2 tsp Cloves, Grnd
  • 3 c. Oatmeal
  • 1 c. Raisins

Directions

  1. Throughly mix pumpkin and brown sugar; then beat in egg substitute.
  2. Gradually fold in flour, soda, and spices, then fold in oatmeal and raisins.
  3. Drop by spoonfuls on non-stick or possibly oil-sprayed cookie sheets. Bake at 350 deg. F for 10 - 20 minutes.
